But owners Steven and Jiyeon Choi aren’t strangers to newness. They’ve even registered a trademark for the Millionaire’s Bacon name. The Chois first restaurant was Taylor Street Coffee Shop, and from there, they opened Fred’s Place in Sausalito, then Sweet Maple and more spinoffs like Kitchen Story in the Castro. If you haven’t tried the bacon in person, picture: a thick-cut, brown sugar and cayenne glazed bacon dish. Holy yum.

The Chois reference their molecular biology background when asked about the sheer size and content of the bacon. But yes, the restaurant will bring their classics to the new SFO eatery, “classic American plates with a touch of Asian influence.” Other favorites include the “big hip,” a deep-fried French toast dish, and breakfast sandwiches and scrambles.

And for the promised travelers, yes, SFO still has it’s promised Manufactory Food Hall, a Tartine spinoff with star chefs Gabriela Cámara of Cala and Pim Techamuanvivitof Kin Khao plus Elisabeth Prueitt and Chad Robertson of Tartine on the way. They promise.
